Iyoboya (salmon) from the Miomotegawa River was cultivated by the Murakami clan for the first time in the world. The flavor created by the seasonal climate of Murakami, made with late-maturing male salmon weighing more than 5 kg caught in brackish waters, is a world-class delicacy. To eat sake-based salmon, first remove the skin and cut the tough meat into thin pieces like sashimi.
